  1. Preheat oven to 450 degrees F.
  2. Place washed potatoes in boiling water. Add a little salt. Reduce heat and cook at a slow boil for about 15-25 minutes - until fork tender but still firm.
  3. Drain and place each potatoe on a baking sheet lined with parchment paper or place in oven safe glass or cookware. Leave space between potatoes.
  4. Gently crush each potato with a fork in criss cross motion. You want the potatoes to stay intact, but be spread out.
  5. Brush the smashed potatoes with 2 tablespoons coconut oil or chicken fat. Season with salt and pepper.
  6. Bake for 15 minutes.
  7. Remove from oven and add thyme and minced shallot to each potato. Bake for another 5-8 minutes, or until the edges begin to turn golden brown.
  8. Remove from oven and transfer to a serving platter. You may add some olive oil if you choose, squeeze a little bit of lemon juice and sprinkle freshly chopped parsley over each potato. Enjoy!
