Steam cauliflower until it is semi soft. Remove and let it drain.
Take potato masher and mash the cauliflower (best to leave stem out).
Mix the cauliflower, egg, mozzarella, oregano, salt and pepper in a bowl. Press the mixture onto a baking mat or parchment paper-lined baking sheet and bake in a pre-heated 450 F oven until lightly golden brown, about 15-20 mins.
Mix the chicken and barbeque sauce. Top the pizza with chicken, the reserved mozzarella and red onion.
Bake until the cheese is bubbling, about 10-15 mins.
If I can save time without losing nutrients, I will do it.
Some recipes instruct that you grate the cauliflower than microwave it. That is time consuming AND zaps nutrients from your food. Other recipes instruct that after you cut the cauliflower in small pieces, you pulse it in a food processor until fine, then you steam it, then dry it, then towel dry it......really! who has got time for that!
The above recipe cuts through the unnecessary steps.
My secret recipe: I love Bone Suckin' Sauce. It IS vegetarian so you can make and keep your "pizza" vegetarian without losing the secret flavor.
